It should actually be Cream of Coconut (I’ll have to update the recipe). Cream of coconut is essentially coconut milk with sugar, see this video I uploaded a few hours ago: https://youtu.be/roASIPHeYOw The original recipe calls for white rum. I used coconut rum (Malibu) to incorporate intense coconut flavor. Some recipes also call for golden rum. I find white rum more suitable as it tastes more neutral. Golden rum or any aged rum could be too bold-tasting for this drink. Sweetener – Sure, you can use regular sugar, but then it wouldn’t be skinny. 😉 I use Besti Powdered Monk Fruit Allulose Blend, which keeps this skinny pina colada sweet, yet sugar free! Unlike other sugar substitutes, it dissolves easily into this drink and has a flavor just like sugar, with no aftertaste. You can also use maple syrup, or simply omit for a less sweet drink.
