Martin Doorly’s company was registered in 1908, 2 years after the Rum Duty Act, and their Doorly’s Macaw Rum was the very first rum from Barbados to be exported pre-bottled rather than in a cask. Patiently matured over 14 years within ex-bourbon casks, this creation reaches new heights of flavour. Doorly’s rum is produced in Barbados by Foursquare Distillery, a family owned and operated firm which was founded in the 1920’s and is today run by Richard Seale, the 4th generation of the family. The use of different cask influences, tropical ageing and various ABVs make the rums in this collection a must have in any bar or home-bar. This is on the woodier, drier side but it works beautifully and I will sip this on any occasion, preferably neat.The choice of a Macaw as their icon dates back to the founder, Martin Doorly, who originally chose the beautiful Scarlet Macaw to appear on the very first bottles of Doorly's Rum. Some rums will be blended again and undergo the second maturation before being bottled usually at 40%.

This is aged and filtered to remove the colour and, while when it was launched it was completely water-transparent, over time the carbon filtration was reduced leaving it with a pale golden hue liquid. Doorly’s 5 Year Old is molasses based, pot and column distilled and aged for 5 years in ex-Bourbon barrels. Doorly’s 8 Year Old is molasses based, pot and column distilled and aged for 8 years in ex-Bourbon casks with, potentially, a component that was aged in former cognac casks for 8 years. Doorly's Rum is produced in the Foursquare distillery by the which is occupies an old sugar factory which dates back to 1636.Top stuff from a top range, expect masses of tropical fruit, chewy caramel, leafy tobacco and fragrant oak notes throughout this gorgeous Barbados rum. The nose is rich and sweet with notes of tropical fruit and toffee apples, the palate is full with a viscous mouthfeel. Current head distiller, Richard Seale, is one of the region’s most innovative distillers and blenders and has a passion for producing perfect rum with great flavour. Seale also decided that the Doorly's brand would continue to trade under its name, keeping the traditional bottling, design and Neotropical Parrot image on the bottle as a recognisable trademark. Great care is taken to work in harmony with the environment and this long established area of plantation is home to many varieties of the macaw family.
